Hari Chutney/ Green Chutney for Chaat


Hari Chutney

Ingredients
Pudina leaves/ Mint leaves- 1 cup
Coriander leaves/ Cilantro- 1 cup
Green chilli/ Serrano pepper- 2 nos
Lemon juice- 2 tbsp
Sugar- 1 tsp( +/- according to taste)
Salt- 1/2 tsp( +/- according to taste)
Water- 2 to 3 tbsp
Green Chutney for Chaat
Method
Grind all the above ingredients in mixer grinder until smooth and fine paste. Use this Hari chutney for Indian Chaat recipes or as a Dip. Can be refrigerated and stored for 15 days.

Aloo Tikki Chaat Recipe( Potato Cutlets)


Aloo Tikki Chaat Recipe

Ingredients
Potatoes boiled and mashed- 3 nos
Red chilli powder- 1 tsp
Chaat masala- 1/2 tsp
Garam masala- 1/2 tsp
Coriander leaves chopped- 4 tbsp
Roasted Cumin seeds- 1/2 tsp
Oil- required
Salt to taste
Aloo Tikki
Method
Mix all above ingredients in a bowl except oil. Divide the potato mixture into equal sized balls. Slightly flatten each balls between palms and shape like cutlets. Heat a tawa or a griddle and slightly grease with oil. Place the prepared aloo tikkis on hot tawa and smear oil around each tikki. Cook on medium heat until aloo tikkis are roasted on both sides. Remove on to plate and garnish with sev and coriander leaves. Serve with ketchup, imli chutney and hari chutney.

Paneer Tikka


Paneer Tikka

Ingredients
Paneer( cottage cheese)- 500 gms
Ginger and Garlic paste- 2 tsp
Thick Curd/ Yogurt- 1 cup
Red chilli powde- 2 tsp
Garam masala powder- 1 tsp
Chaat masala- 1/2 tsp
Kasoori methi( crushed)- 1/2 tsp
Vinegar- 1 tsp
Kesar food color- few drops
Salt to taste
Oil required

Paneer Tikka Recipe
Method
Cut the paneer into 1/4 inch thick squares.
Tie 1 cup curd in muslin cloth and let it hang for 1/2 hour until all the water from curd is drained and curd becomes thick. Add the hung curd, ginger and garlic paste, red chilli powder, garam masala powder, kasoori methi, vinegar, food color and required salt to a bowl. Whisk everything well and add the paneer pieces. If required you can also add diced capsicum and diced onions. Let the paneer soak in curd marination for atleast 2 hours.

To cook paneer tikka in oven- 
preheat oven at 300 degree. Arrange the marinated paneer pieces( capsicum and onions if used) into a metal skewer. Brush paneer pieces with little oil, place skewer on a baking tray and place tray in the center rack of the oven. Bake the paneer tikkas for 10 mins or until paneer pieces are browed on the sides. 

To cook paneer tikka on tawa- 
heat a non stick pan or griddle, grease tawa with little oil and place the marinated paneer tikkas on hot tawa. Cook on medium flame until paneer tikka are roasted and browned on both sides.

To serve-remove the paneer tikkas on to a plate, sprinkle chaat masala on top, garnish with coriander leaves, green chillies and lemon wedges and serve with green chutney.

Chilli Mushroom



Chilli Mushroom
How to make Chilli Mushroom dry recipe

Ingredients
Button mushroom( cleaned and quartered)- 250 gms
Egg- 1 no( optional)
Cornflour- 3 tbsp
Maida/ All purpose flour- 3 tbsp
Rice flour- 1 tbsp
Baking soda/ Cooking soda- few pinch
White pepper powder- 1 and 1/2 tsp
Ajinomoto- 1/4 tsp
Salt to taste
Water required
Onion minced- 1/2 no
Green chilli minced- 1 no( +/- according to taste)
Ginger minced- 1 tsp
Garlic minced- 1 tsp
Chilli Vinegar- 1/2 tsp
Dark soya sauce- 2 tsp
Spring onions/ Scallion greens( chopped)- few tbsp
Chopped coriander/ cilantro leaves- few tbsp
Oil to deep fry

Chilli Mushroom Dry
Method
In a bowl add 1 egg, white pepper powder, salt, ajinomoto, cooking soda, cornflour, maida and rice flour. Beat all the ingredients well with a beater or a fork and add water if required. Beat until a smooth and lump free batter is formed. Heat oil in pan to deep fry, dip the mushroom pieces in the prepared batter and drop it into the hot oil. Deep fry the mushroom pieces until crisp and transfer the fried mushroom pieces to a plate. Next heat few tbsp oil in a pan, when hot add minced onion, green chilli, garlic and ginger toss well for few sec. Reduce heat and add soy sauce, chilli vinegar and required pepper, salt. Again toss well and add prepared mushroom pieces, increase heat and toss the mushrooms until well coated with sauce. Garnish the chilli mushrooms with chopped spring onion greens, coriander leaves and serve hot.

Mango Custard Recipe


Mango Custard Recipe

Ingredients
Mangoes ripe- 2 no( medium sized)
Custard powder vanilla- 4 tbsp
Milk- 2 cups
Sugar- 4 heaped tbsp
Mango pieces to garnish

Mango Custard Recipe
Method 
Heat 1 and 1/2 cup milk in a pan and bring it to boil. 
In a bowl add 1/2 cup of cold milk and dissolve 4 tbsp custard powder without any lumps.
Add the custard dissolved milk mixture to the boiling milk and stir continuously until the milk thickens like cream. 
Remove custard from heat and allow to cool at room temperature.
Next wash mangoes and remove the mango skin, cut the mango flesh and discard the seed. 
Coarsely chop the mango flesh until pulpy.
In preferred glass or dessert bowl, first add the mango pulp then top with custard, again add mango pulp over custard and top with custard until it reaches rim of glass or bowl. Garnish with few mango pieces and refrigerate mango custard for atleast 4 hours and serve cold.

Red Ranch Sauce/ Zesty Dipping Sauce


Red Ranch - Zesty Dipping Sauce
I wanted to make a zesty dipping sauce for my crispy beans 
like the one served at PF Chang's.
 I tried out with ranch, mayonnaise and paprika many times and finally 
this recipe came so close to the zesty dipping sauce served at PF Chang's. 
It was worth the effort!

Ingredients
Mayonnaise- 4 heaped tbsp
Frank's hot sauce- 1 and 1/2 tbsp (+/- to taste)
Vinegar- 1 tsp( for extra kick)
Salt and Pepper to taste.

Method
In a bowl combine mayonnaise, frank's hot sauce, vinegar, salt and pepper. 
Whisk everything well with a fork until smooth and creamy sauce is formed.
 Serve this zesty dipping sauce with crispy fried beans, with fried chicken or with beer battered fish etc.

Gobi Lollipop/ Cauliflower Lollipops Recipe

Gobi Lollipop Recipe
Ingredients
Cauliflower florets with long steam- 14 piece
Maida/ All purpose flour- 1/4 cup
Corn flour- 1/4 cup
Rice flour- 2 tbsp
Ginger and Garlic paste- 1 tbsp
Red chilli powder- 1 tsp( +/- to taste)
Lemon juice- 1 tsp
Ajinomoto- few pinch
Cooking soda/ Baking soda- few pinch 
Kesar/ Red food color- little( optional)
Salt to taste
Water required
Oil to deep fry.
Cauliflower Lollipop
Method
Add cauliflower florets to the boiling water and cook until half done. 
Drain the half cooked cauliflower florets, pat dry and set aside.
In a bowl combine ginger and garlic paste, red chilli powder, lemon juice, ajinomoto, red food color. Mix everything well and to this mixture add maida flour, cornflour, rice flour, cooking soda, salt and few tbsp water. 
Again mix everything well to get smooth and lump free batter( like bajji/ pakora batter). Heat oil in a pan to deep fry, when oil is hot take a cauliflower floret, hold the long stem and dip completely in prepared batter and drop it into hot oil. Do the same with rest of cauliflower florets and deep fry them until crispy and golden brown. Cover the cauliflower florets long stem with foil paper and serve hot.
 This is a ideal snack/ finger food for get together, kids party and for cocktail parties.

Garlic Naan Recipe - How to make Garlic Naan without oven

Garlic Naan Recipe
Ingredients
Butter naan recipe<-- click for recipe
Garlic clove minced- 1/4 cup
Coriander leaves chopped- 4 tbsp
Garlic Naan
Method
Follow the butter naan recipe, on the rolled naan dough sprinkle some minced garlic and coriander leaves on top and slightly press so that garlic and coriander leaves stick to naan dough. Cook the naan as per butter naan recipe and gently rub butter on garlic side of naan. Serve hot with side dish of your choice.

Butter Naan Recipe Without Oven ( How to make butter Naan stove top method)

Butter Naan Recipe
Naan( Indian flat bread) is traditionally cooked in Tandoor grill. But for ease of cooking naan at home, here is recipe on how to cook the butter naan on Tava/ griddle.

Ingredients
Maida flour/ All purpose flour- 4 cups
Thick curd- 4 tbsp
Warm milk- 1/2 cup
Dry yeast- 2 tbsp
Sugar- 1 tsp
Salt- 1 tsp + little if needed
Water if required
Butter to spread on Naan.
Butter Naan
Method
In a bowl add yeast and sugar to warm milk. Mix well, cover the bowl and set aside to rest until the yeast in milk ferments and becomes frothy. In a large bowl add flour, salt, curd and fermented milk. Mix the dough and knead dough well for 7 mins until dough becomes soft. Cover the dough in the bowl with damp cloth and set aside for atleast 4 hours or until the dough to double in size. Once naan dough doubles in size divide the dough into equal sized balls. Roll the dough into oval triangular shapes.( to get the oval triangular shape of naan, first roll the dough in oval shape then at one oval end roll the dough in opposite direction so that one end gets wider and other end gets narrow). 
Heat a tawa, when hot place one rolled naan dough on tawa. Cook naan on both sides for 30 seconds on each side. Light another gas burner, with help of metal thong( one used to cook papad) immediately transfer the half cooked naan to direct gas flame and cook on naan on both sides until brown spots appear on naan( as we cook pulka). Transfer the cooked naan to a plate and generously spread butter on top on hot naan. Serve hot butter naan with palak paneer, butter chicken etc.

My Cooking Show" Enga Veetu Samayal" for Captain TV

Hello Friends, I know I haven't updated any recipes lately, I'm very delighted to share some good news with you. I was doing couple of Cookery shows for Tamil TV channels.
