Ennai Kathirikai Kuzhambu

Ennai Kathirikai Kuzhambu
Purple brinjal/ Small eggplant- 8 nos
Pounded small onions/ shallots- 8 nos
Pounded garlic cloves- 3 nos
Tamarind pulp- 1/4 cup
Red chili powder- 1 1/2 tsp
Coriander powder- 4 tbsp
Salt to taste
Whole red chili- 4 nos
Mustard seeds- 1 tsp
Fenugreek/ Methinks seeds- 1/4 tsp
Sombu/ Fennel seeds- 1 tsp
Curry leaves- few
Gingley oil- 4 tbsp

Ennai Kathirikai

Slit the brinjals in the center and set aside.
Heat gingerly oil in a kadai, when oil is hot add mustard seeds, fennel seeds, fenugreek seeds, whole red chilies and curry leaves, saute for few seconds. Add pounded onions and garlic to the pan and saute for 2 minutes. Add the brinjals and saute until brinjal turns its color. In a small bowl combine tamarind pulp, 1 cup water, red chilli powder, coriander powder and salt, mix well. Add this prepared mixture to the frying brinjals. Bring the mixture to boil, cover pan with lid and simmer for 10 mins until brinjal is cooked and gravy thickens. Serve hot Ennai Kathirikai with steamed rice and Applam.

Chana chaat recipe( Garbanzo Salad)

Chana Chaat

Cooked Chickpeas- 400 gms
Cucumber seeded and chopped- 1 no
Carrot finely chopped- 1 no
Onion small chopped- 1 no
Green chili chopped- 2 nos
Lime juice- 2 tbsp
Chaat masala- 1 tsp
Red chili powder- 1 tsp
Salt- 1 tsp
Olive oil- 1 tsp
Coriander leaves to garnish.

In a medium bowl combine all the above ingredients, toss well and serve.

Chilli Cheese Toast.

Chilli Cheese Toast

White Bread Slices- 6 nos
Sharp Cheddar Cheese or processed cheese( grated)- 1 cup
Capsicum/ Green bell pepper( finely chopped)- 1 no
Onion large( finely chopped)- 1 no
Green chili( minced)- 4 nos
Green coriander leaves/ Cilantro( chopped)- few tbsp
Butter- 3 tbsp
Mayonnaise- 3 tbsp
Salt to taste
Indian Chilli Cheese Toast

In a bowl combine chopped onion, capsicum, green chili, coriander leaves and required salt, mix well. Spread 1/2 tbsp butter on one side of each bread slices. On the other side of bread slice spread 1/2 tbsp mayonnaise. On the mayonnaise side, top with capsicum-onion mixture and sprinkle grated cheese on top generously.

To bake in oven
Pre- heat oven at 300 f, place the prepared bread slices with butter side down on a greased baking tray. Place the baking tray in the center rack of the oven and bake until cheese melts.

To cook in tawa/ griddle
Heat tawa/ griddle and grease with 1 tsp oil, reduce heat to medium and place the prepared bread slices with butter sided down on tawa/ griddle. Cover the tawa/ griddle with large lid, cook for 2 mins until cheese melts.

Pepper Chicken Fry.

Pepper Chicken Fry
Boneless chicken cubes- 500 gms
Cornflour-4 tbsp
Maids/ All purpose flour- 2 tbsp
Cooking soda- 1/4 tsp
Salt- 1/2 tsp
Minced onion medium- 1 no
Minced garlic- 2 cloves
Crushed red chili/ red chili flakes- 1 tsp
Crushed black pepper corns- 1 1/2 tbsp
Soy sauce- 1 tbsp
Ajinomoto- 1/4 tsp
Salt- 1/2 tsp
Oil to deep fry

Black Pepper Chicken Fry
Sieve cornflour, maida, cooking soda and salt. Pat dry the chicken pieces and dust with flour mixture. Heat oil in a wok, when hot add the flour dusted chicken pieces and deep fry until golden brown and crisp. Next add 1 tbsp oil in another wok when hot add crushed red chili flakes and black pepper, saute for 2 seconds. Add minced onion and garlic, fry for a minute add fried chicken, season with soy sauce, ajinomoto and salt. Stir fry until everything is well coated on the chicken pieces. Serve black pepper chicken hot with fried rice or noodles.
